Asparagus | In Season
Prosciutto Wrapped Asparagus
1 bunch asparagus, trimmed
1 tbsp olive oil
8 slices prosciutto
Preheat oven to 400°F.
Drizzle asparagus with olive oil and rub until it’s evenly coated.
Wrap three asparagus spears tightly in prosciutto.
Place wrapped asparagus on a baking sheet.
Bake at 400°F for 10-15 minutes or until prosciutto becomes crispy.
Enjoy!
Quinoa Salad with Asparagus and Feta
1 cup quinoa
2 cups vegetable broth
1 clove garlic, minced
3 cups asparagus, trimmed and chopped
½ cup feta, crumbled
1 lemon, zested and juiced
salt and pepper
fresh parsley
In a small saucepan combine quinoa, vegetable broth and garlic. Bring mixture to a boil.
Once boiling, reduce heat to low, cover and simmer for 20 minutes.
After 20 minutes, turn off heat and let quinoa sit for another 5 minutes.
In the meantime, in a steamer basket, steam asparagus for 2-3 minutes or until it turns bright green and becomes fork tender.
Run asparagus under cold water to stop the cooking process.
In a large bowl toss quinoa with asparagus, lemon zest, lemon juice,
olive oil, fresh
parsley, salt, pepper and crumbled feta cheese.
Stir well to combine.
Store in the refrigerator for 3-4 days.
Enjoy!
Spicy Shrimp & Asparagus
2 tbsp butter
1 clove garlic, minced
1 bunch asparagus, trimmed and chopped
1lb shrimp, peeled
¼ cup white wine OR vegetable broth
½ lemon, juiced
½ tsp red chili flakes
salt and pepper
In a large frying pan melt butter over medium-high heat.
Add garlic and sauté for 30 seconds or until it becomes fragrant.
Add shrimp, asparagus and white wine.
Turn heat down to medium and cover for 3-4 minutes or until shrimp is cooked all the way through.
Finish with lemon juice, red chili flakes, salt and pepper.
Serve over a bed of rice.
Enjoy!

When wine is being boiled, alcohol is being vaporized. Grape flavor is what it remains in the dish. Kids can consume wine based food lol

We have them in our garden and they are very productive, however, we mostly just have them boiled with dips, and while this is a great starter, I don't really know any other quick and delicious recipes.
