Pain au chocolate (Chocolate Croissants):

🔅Sugar ~ 40g
🔅Butter ~ 60g
🔅Warm milk ~ 140ml
🔅Salt ~ 1tsp
🔅Fresh yeast ~ 12g (dry 2tsp)
🔅Extra butter ~ 150g

Pistachio Escargots (Pistachio Rolls):
🔅Vanilla pudding mix ~ 74g
🔅Sugar ~ 30g
🔅Butter ~ 2tbsp
🔅Milk ~ 800ml
🔅Puff pastry ~ 1
🔅Chocolate chips ~ as required

Eclairs:
🔅Water ~ 120ml
🔅Sugar ~ 1tbsp
🔅Butter ~ 50g
🔅Plain flour ~ 75g
🔅Eggs ~ 3
🔅Salt ~ 1/2 tsp
🔅For topping ~ 150g Chocolate + 2tbsp Butter

Croissants:
