1:30 you could have planted half of the potatoes, cut each potato into pieces because all you really needed to plant is a chunk of potato and the eye. Cut each piece and let it air dry overnight and then plant,sweet potatoes you just twist off each eye and go straight to the dirt.

A timesaving tip is that you don't need to peel the potatoes if using a potato ricer! The skin separates away from the riced potatoes!

Add a thin layer of cheese (of your choice) in the center of the potatoes
Ie.. after the potato has absorbed the butter, mixture
Layer a small amount of potato in pan, then a layer of cheese, then layer the remainder of the potato on top and compress/chill
I imagine the cheese being ooy-gooy center as you bite the salted crispy outter layer
