It's the leidenfrost effect. The water is instantly boiling, creating a vapor barrier causing the water to literally float on the pan. Surface tension holds the water in little beads.
This is also why you're better off having bare skin if you're going to come in contact with something like liquid nitrogen. It's strictly due to the extreme difference in temperature.
For decades, my Friday's always stuck to the bottom of the frying pan. Then I saw a video similar to this, and by waiting until the pan is hot enough, and then putting in butter, the last six months I've had perfect slide around the pan over easy eggs. It's wonderful! Thank you for getting the word out to more people!
Iadd oil….. Seriously? Is this a video to teach your two-year-old? Maybe move on to teaching someone how to boil water. I know you have to put up content but content does not have to be ridiculous. Like this.
I won’t say if this is true or not, im going to say it isn’t. To keep food from sticking just use oil, butter or grease. It’s how we keep everything else from sticking
I stick to my cast iron, good for everything including keeping a thief out of the house. Now if you want to challenge yourself, scramble eggs in the microwave, and make a cake of corn bread over an open fire.

And make sure not to make the eggs crunchy and overcooked or just use some cooking spray healthier than oil
I do this, but I use a little bit of oil before I heat it. The oil fills in all the imperfections and creates a non stick layer.
You could also just season the pan
Too much to do though?
You cannot even fry an egg
Over cooked eggs🤣
Here something easier for you; just use butter instead of oil…

Cooking with oil huge L.
Always use real butter for the W.

Ok they didn’t stick but you burnt the eggs. You’re cooking too hot. Use a well seasoned cast iron to get perfection.
That was all my Mom used was stainless steel! She rarely used the no-stick pans!
I had seen this somewhere else last year. Ever since, I been frying my eggs like this. It really works. I throw in some butter for taste.
Nobody wants eggs that look like that.
Oh no, they're burnt to me
Wow! Use oil?
Why would you waste your time with those horrible steel pans that are impossible to clean when we have amazing ceramic and Teflon technology now
Burnt
As soon as I heard mercury ball water test I knew this was some rich person bullshit I could skip
NO ONE PLEASE DO THIS , use ur brain and just go buy a non stick, if u are tight in money Family Dollar literally has non stick pans for 5$
Crispy egg edges means the heat is too high 🤷♂️
Exactly how my father taught me.
Overcooked

Or just use butter.
They look terrible and burned.
I find it quite ironic that this "myth busting" video is in and of itself a myth….you do not need to get the pan that hot if you use that much oil.
Those eggs are hard as toast on the bottom. thats not how you cook eggs.
Just buy a non-stick pan.
Or just use PAM
Just get another 🍳
Huh, I learned something new tonight!
Yeah I don't like oily eggs , it's a thing a friend used to do when we were hung over now I can't do it its so gross ill use a non stick pan
Pour mercury into the pan before cooking, got it 👍

Yeah but it but it turns the bottom of the egg into a potato chip. Hard pass
Thank you, Thank you, Thank you ❤
Mercury balls? It’s called the “Leidenfrost effect”.
Orrrr you cooking oil?
Instructions unclear. Now have mercury poisoning.
Now someone teach her how to cook eggs without overcooking the whites with all the brown crunchies.
I never knew that!
Bruh if ur using oil it doesnt matter how hot the pan is 😂
I had no Idea about this..
Lmao, let me see the bottom of those eggs.
What time do we eat. P.S. I like bacon
Thanks. I did not know this.
Good trick!
Forgot to mention to let the oil heat up…
