  1. Ingredients:
    * Milk – 2 litres
    * Vinegar – 4 tbsp
    * Water
    * Maida/All-purpose flour – 1 tsp + 2 tbsp
    * Sugar – 3 cups

    Recipe:
    1. Boil 2 litres milk in a kadai. Turn off the gas and add 4 tbsp vinegar + 4 tbsp water mixture in parts and keep stirring slowly.

    2. Once it has curdled, strain through a muslin cloth. Wash with some cold water and then drain all the water. Use some weight to remove all the leftover water.

    3. Once it has completely dried but is still warm, transfer to a mixing bowl and beat it thoroughly.

    4. Add 1 tsp maida and smoothen out all the particles.

    5. Do not over knead. Knead till it comes together and leaves the sides.

    6. Give it the rasgulla shape. Cover with a cloth.

    7. Take a kadai, add 6 cups water and 3 cups sugar. Bring it to a roaring boil.

    8. Add the rasgulla and after 30 secs add the Jhol.

    9. Jhol: 1/2 cup water + 2 tbsp maida

    10. After adding the jhol, let it cook for 15-20 mins on high flame. Keep adding water if required.

    11. Tranfer the rasgulla with the chashni to a bowl with some ice. Let it cool down and enjoy!
