SPAGHETTI ALLA CARBONARA RECIPE

Tonight we cooked a very famous but simple Italian dish: Spaghetti alla Carbonara

Ingredients for 2 people:

250 grams of spaghetti (Italian brands are preferred) -NOT spaghettini
3-4 medium sized fresh eggs
salt
black pepper
100 grams of diced pig cheek (guanciale). if you can’t find it, then you can use pancetta or bacon
a tiny bit of olive oil (or no oil at all : see edit description below)
100 grams of grated sheep cheese (Pecorino Romano). if you can’t find it , real grated parmigiano Reggiano is the second choice for this dish

EDIT: many people in Italy don’t put any oil at all when cooking guanciale in the pan as the fat of the guanciale is sufficient. in that case just melt the diced guanciale in a hot pan.
some people also use only the egg yolks and swear that is “the way”. up to you, both versions are very good in my opinion. eggs must be very fresh
